The development in Indonesia is still focused on increasing productivity and until now there has been no study the level genetic similarity based quality characters. Therefore, purpose this was to examine kinship from collection Research Institute Tea Cinchona. consisted two stages, testing content chemical compounds (polyphenols caffeine) organoleptic testing. material used both tests fresh shoots consisting peko + 3 young leaves (P+3). In testing, variety were first into Furthermore, tested organoleptically by three credible panelists. data test results then statistically get coefficient variation (CV), which indicates diversity. closeness between characters analyzed using JMP 16.0 program (trial version), arranged clusters. To see contribution each parameter clones, a principal component analysis (PCA) carried out. indicate that are four main clusters grouping tested. cluster excels character taste aroma, second appearance, seductive colour, infusion, third polyphenols, while fourth caffeine. contributed caffeine, aroma.

Isolation of An Aroma Precursor of Benzaldehyde from Tea Leaves (Camellia sinensis var. sinensis cv. Yabukita).

The cyanoglycoside, prunasin, was isolated for the first time as an aroma precursor of benzaldehyde from fresh tea leaves (Camellia sinensis var. sinensis cv. Yabukita). Prunasin was readily hydrolyzed by a crude enzyme prepared from the fresh tea leaves to liberate benzaldehyde. The isomerization of prunasin under neutral conditions was also recognized.
